Butternut Squash Soup
My mom made this last week and I ate SO much of it. I’m a sucker for butternut squash soup and this was one of the best I’ve ever had. I will definitely be making it again this fall.

My mom asked what I wanted for dinner on my last night in Hershey, and after seeing this recipe on Instagram, I knew this was what I wanted! The meatballs were served with basmati rice and acorn squash. Such a great last meal at home — thanks, Mom!

Black Bean Veggie “Meatballs”
Another meatless Monday idea! These black bean meatballs are SO easy. We ate these with soybean pasta, which is loaded with fiber and protein. Simple and easy vegetarian meal!

I’ve made these cookies plenty of times and they’re always a hit! I think almond flour adds a great taste to baked goods. Don’t ask me how many I eat in one day!
Five-Minute Dinner: Soup + Salad
No recipe for this one since it’s something I quickly threw together. I picked up some Amy’s organic soups, heated them and served them alongside a yummy salad. The salad was a base of chopped spinach topped with diced apple, hemp seeds, chickpeas and goat cheese. Easy and delicious!
Energy Bites
These have been a staple in my kitchen for years! They are easy, delicious and the perfect snack. My entire family loves them. If you love peanut butter, you will too! If you don’t love peanut butter, I’m not sure about you… 😉
Cinnamon Oat Kodiak Cakes
I think everyone has heard of this pancake mix before, but this flavor is the best! I like to top mine with Greek yogurt, almond butter and maple syrup. Perfect weekend (or any day) breakfast!
