Sweet Potato Fall Smoothie
I’m going to expose my level of basicness with this post but I don’t mind one bit. I LOVE fall! The cozy sweaters, changing leaves, hot apple cider, pumpkin spice, the list goes on and on. I love summertime and it’s fast pace, full of weekend trips away, barbecues and vacation. My summer was go, go, go with an amazing family vacation to Europe and spending time with friends and family almost every weekend. As much as I value this time and am so grateful for these experiences, I enjoy settling into a routine as fall approaches. Slowing down, enjoying the fall foliage and spending time in Charm City is the perfect way to relax after an adventure packed summer.
So let’s get on to the real star of fall — the food! Apples, pumpkins, sweet potato, squash. Give me all the fall goodies! Ever since Labor Day weekend, I have been in the kitchen cooking up any and every fall recipe and pinning alllll of the fall pins on Pinterest. It’s a delicious hobby and someone has to do it (it also allows me to put off things like doing laundry and vacuuming). I proudly accept the basicness that comes with the territory.
One of my favorite recipes that I can’t get enough of is this sweet potato fall smoothie. Holy cow — it is good. It’s the perfect recipe to add to your smoothie lineup, especially with the warm temperatures that are still hanging around. Guys, creamy and delicious don’t do it justice. Using a roasted sweet potato brings out a rich flavor that pairs perfectly with the cinnamon.
Here’s how I did it:
- 1/2 frozen banana
- 1/4 large frozen sweet potato (I roasted mine in the oven, let it cool, cut it into pieces and placed in the freezer)
- 1/3 cup frozen cauliflower
- 1 scoop vanilla protein powder (I like Garden of Life)
- 1 T almond butter (or any nut butter you like)
- Big dash of cinnamon
- 1-1 1/2 cups almond milk
Place all ingredients into a blender and blend until smooth. Top it with cacao nibs, shredded coconut, granola or whatever your heart desires and then go to town 🙂 It’s fall in a smoothie, my friends. Enjoy and let me know what you think!
