One thing that totally saves me when I’m busy is getting my groceries delivered. After a long week of traveling and a Saturday spent teaching yoga and babysitting, the last thing I wanted to do on Sunday was go to a crowded grocery store. Although I typically enjoy grocery shopping, I was exhausted from my week and knew Instacart would save me time and energy so I could enjoy my Sunday!
On Sunday morning, I shared what I purchased for the week on my Instagram stories and it inspired me to share how I like to grocery shop. I love getting inspiration from other folks when I feel like I’m stuck in a food rut, so I thought I’d share my current grocery list and how I create my meals.
I only grocery shop for one person, so I stick to pretty simple meals that are quick to prepare and versatile. I also don’t love making huge batches of food like casseroles/oatmeal bakes because I find it makes it harder for me to honor my cravings and I tend to get stick of eating the same thing every day. This style of shopping is easy to mix and match and still short on cooking and prep time. Read further for my grocery list and examples of what I eat for breakfast, lunch, dinner and snacks!
Veggies:
– Large container of spinach and kale
– Mini peppers
– Baby carrots
– Cherry tomatoes
– Frozen broccoli
– Frozen cauliflower rice
– Frozen spinach
Fruits:
– Blackberries
– Blueberries
– Honey crisp apples
– Bananas
– Frozen blueberries
Protein/Mains:
– Eggs
– Chicken sausage
– Salmon
– Veggie burgers
– Cauliflower Pizza
– Black beans
Carbs:
– Sweet potatoes
– Quinoa
– Brown rice
– Oats
– Bread (I love Trader Joe’s sprouted wheatberry — I keep it in the freezer and warm a slice up in the oven when I use it)
Healthy fats:
– Coconut milk
– Yogurt (I like Siggy’s)
– Cheese
– Almond Butter (Trader Joe’s is amazing!)
– Avocados
– Olive oil
Etc:
– Perfect Bars
– Crackers
– Hummus
– Nuts
– Hemp seeds/chia/flax
– Salsa
– PB cups (my Dad just had fresh Reese’s delivered to my apartment and they’re amazing!!)
Since I’m just cooking for myself, I typically pair foods from my list together for each meal into some sort of bowl. Oatmeal bowls, yogurt bowls, smoothie bowls, salad bowls, rice bowls, etc. Bowls are versatile and easy to throw together!
Examples of what I eat:
Breakfasts:
– Yogurt bowl topped with nuts and fresh fruit
– Oatmeal topped with almond butter and berries
– Smoothie made with frozen spinach, frozen blueberries/banana, protein powder, almond butter, chia/flax and coconut/almond milk (I like to top with granola, cacao nibs, coconut flakes or whatever I have on hand!
Lunches:
– Salad with walnuts, diced apple, cheese, veggie burger and avocado, typically paired with some fresh fruit
– Quinoa bowl with cauliflower rice, tomatoes and chicken sausage
– Brown rice bowl with black beans, roasted sweet potatoes, avocado and tomatoes and topped with salsa and shredded cheese
Dinners:
– Omelet with spinach/kale, tomatoes and peppers, topped with avocado and served with a piece of toast (I love breakfast for dinner)
– Sweet potato topped with dippy eggs and sauteed veggies on the side
– Brown rice bowl with salmon and broccoli
*always followed by a PB cup (let’s be honest, lunch is too!)
Snacks:
– Carrots, mini peppers, crackers and hummus
– My FAVORITE protein bites — so easy and delicious
– Apple and almond butter
– Amazing four-ingredient banana cookies (they’re always in my freezer and I put them in the microwave for about 15 seconds for gooey perfection)
– Perfect Bars (these are a treat because $ so I save them for when I’m on the road!)
My breakfasts are so easy to make and always include fiber, protein, healthy fats and carbs. I love something sweeter for breakfast and enjoy savory eggs for dinner because I love breakfast for dinner! My lunches and dinners are pretty interchangeable and I vary them depending on what I’m in the mood to eat.
I love buying ingredients that I can easily swap in and out for every meal. I’ve been loving fresh produce with the warmer weather! I always include fruit with breakfast and veggies at lunch and dinner, but they’re great for snacking at anytime.
