I’ll just start by saying YUM. These peanut butter blondies are easy, healthy and delicious. On Sunday after a weekend full of yoga (read my yoga workshop recap here), I was craving a dessert so I perused my parents’ pantry and decided to look on the web for some inspiration. I knew I wanted to make something with peanut butter and chocolate (when in Hershey, right?) but on the lighter side. I was inspired by Ambitious Kitchen’s paleo cookies and used her recipe as a base.
The blondies turned out way better than I imagined! Baking with coconut flour can make baked goods pretty dense, but these are fluffy clouds of goodness. I whipped these up in just a few minutes while I was making dinner and I will 100% make them again. They would be so good served with some vanilla ice cream, too!

Healthy Peanut Butter Blondies
Servings: 12 / Prep Time: 10 minutes / Cook: 20 minutes
Ingredients:
- 3/4 cup peanut butter (I used Reese’s peanut butter because #Hershey)
- 1/3 cup maple syrup
- 2 tablespoons coconut oil melted and cooled
- 2 eggs
- 1/4 cup coconut flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup chocolate chips
Directions:
- Preheat oven to 350 degrees.
- Spray 7 x 10 baking dish with nonstick spray. (Can use a different size but adjust bake time)
- Add peanut butter, maple syrup and coconut oil in a blender/food processor and combine until smooth for about 1 minute.
- Add in eggs and combine again.
- Add coconut flour, baking soda and salt and process until smooth. It will be pretty runny.
- Fold in chocolate chips.
- Spread evenly into baking dish and bake for 20 minutes. Check with a toothpick to ensure it is cooked through.
- Cool for 10 minutes, slice into blondies and enjoy!
