Happy fall! It’s October so it’s officially time for all things pumpkin. I’ve made a lot of pumpkin treats so far and I decided I wanted to make pumpkin granola.
Granola is one of those items that you don’t realize is expensive until you become an adult and start buying it on your own. Other items on that list include toilet paper and laundry detergent, but I digress. Onto the granola recipe!
Healthy Pumpkin Granola
– 2 cups oats (gf optional)
– 1/2 cup pumpkin seeds
– 2T chia seeds
– 2 tsp pumpkin spice
– 2T coconut sugar
– 1/2 tsp salt
– 1/4 cup melted coconut oil
– 1/4 cup maple syrup
– optional: 1/4 cup dried cranberries
Preheat oven to 350 degrees. Mix dry ingredients in a large mixing bowl. Add coconut oil & maple syrup. Stir to combine. Bake for 12 minutes or until golden brown. Add cranberries and allow to cool. Enjoy!
