Hi there! I’ve been a little MIA this week because I’ve been so busy packing for my move. You can read about that big change here. At this point, I’m feeling less anxious about the change and transition, and more eager to have the move completed. Tomorrow is my last day in my apartment and then I will be headed to the sweetest place on earth 😉
Since I’m moving, I’ve tried not to buy many groceries this week and to use up what I have in my pantry and freezer. A few things I always keep in stock are peanut butter, frozen spinach and frozen bananas. When I scanned my inventory, I quickly knew what I wanted to make for breakfast.
Peanut butter and bananas are one of the best combos out there (you simply can’t argue this). This smoothie is simple and delicious — it honestly gets me out of bed because I’m excited to eat it. You can’t taste the frozen spinach at all so it’s a great way to sneak in a serving of veggies!
Peanut Butter Banana Smoothie
- 1 frozen banana
- 1/2 cup frozen spinach
- 2 T peanut butter
- 2 T flax (great for fiber, can sub chia seeds)
- 1 serving vanilla protein powder (can sub 1/2 cup yogurt)
- 1 – 1 1/2 cups almond milk (I like my smoothies thicker so I can eat them with a spoon, if you like to drink yours, opt for more)
- Dash of cinnamon
Directions: add all ingredients to a blender and blend! Pour into a glass/bowl and add some toppings if you’d like. I love using cacao nibs, chia seeds, coconut, granola, etc.
I’ve tried a lot of different smoothies but I think this classic combo will always be my favorite! The protein, healthy fats, fiber and greens are filling and nutritious. I love this for summer because it’s super refreshing — perfect simple breakfast and great to take on the go!
