Happy Sunday, friends!! Another weekend has gone by and that means we’re a little bit closer to Christmas. 🙂 I had a relaxing weekend spent here in Baltimore with no set plans. It was a much needed change of pace after a busy Thanksgiving holiday. Tyler and I got to check out a brewery we’ve never been to, go to an aerial yoga class for the first time (we loved it — more to come in a later post) and just relax. Today, I’m spending my day working on some fun content for the blog and meal prepping. I can’t wait to share some upcoming content with you, so stay tuned! As part of meal prep, I just roasted some acorn squash and honey nut squash and my house smells amazingggg. If you read this meal prep post, you know roasted squash has been a serious obsession of mine lately. I love reheating it on the stove and pairing it with a protein like chicken and a drizzle (more like a big scoop) of tahini. It is so good! Anyways, I’m so excited to share one of my favorite and easiest recipes to meal prep with you — Peanut Butter Protein Bites.
These protein bites are so delicious and the perfect snack to grab on the go. They only take five minutes to make and they’re healthier and cheaper than prepackaged granola bars. The classic PB and chocolate combo makes them taste like a decadent treat but they’re actually really nutrient dense #winning. I love making these to bring to work for a snack or to grab as a light snack before I go to yoga class. The peanut butter and chia seeds pack some protein and the flaxseed gives an added boost of fiber. You will love them — I’ve got my whole family addicted to making them too! 🙂
Ingredients:
- 1 cup oats (optional to use gluten-free)
- 1/2 cup peanut butter (can sub for any other nut butter you like — I love mixing it up!)
- 2 tbsp. chia seeds
- 2 tbsp. flaxseed meal
- 1/4 cup maple syrup
- 1 tbsp. melted coconut oil
- 3 tbsp. chocolate chips (I love using the vegan mini chips from Enjoy Life)
- 1/4 tsp. cinnamon
- Pinch of sea salt
Recipe:
Combine all of the ingredients in a mixing bowl, stir until combined and roll into balls. Store in tupperware in your refrigerator. So easy! It typically makes about 15 protein bites depending on how large you roll them. They will stay good in your fridge for about a week (if they last that long 🙂 ) or you can store them in your freezer. Pro tip: I like to pop the mixed ingredients in the fridge for a few minutes after combined because they’re easier to roll.
