Happy Hump Day! I’m excited to bring you my current favorite smoothie recipe because it is SO good. I never thought I’d say this but I’ve been making it more frequently than my favorite PB banana smoothie. #gasp
I love smoothies in the summertime. I load mine with protein, healthy fats and fruit/veggies to keep me satisfied throughout the morning. Don’t fear the veggies – I promise you can’t taste them! I also love to add toppings for an added crunch.
The Best Summer Strawberry Smoothie
- 1 heaping cup of frozen strawberries
- 1/2 cup frozen cauliflower*
- 1/2 cup Greek yogurt
- Scoop of vanilla collagen (optional)
- 1 tablespoon of flax-meal or chia seeds
- 1/2 to 1 cup of almond milk depending on desired consistency (less milk = thicker smoothie)
- Toppings: granola, nuts for healthy fats, chia seeds, more strawberries or whatever you fancy!
*if you struggle to digest cauliflower, steaming it before you freeze it for smoothies is a big help!
This smoothie uses vanilla collagen, which I got a sample of Thrive Market. I liked the sample so much that I ordered it! If you don’t have the vanilla collagen and want to add additional protein aside from the Greek yogurt, plain collagen or some vanilla protein works great as well.
A few other breakfasts I’ve loved lately:
A BIG cinnamon oat Kodiak Cakes pancake topped with Greek yogurt, almond butter and maple syrup.
This is a great breakfast for when I’m on the go because it’s full of healthy fats and protein that keep me full for a few hours. Bonus — this flavor tastes like Nutella!
