Howdy! A lot of “health/wellness” bloggers I follow share these types of posts and I thought it would be fun to write one. I’m sharing what I ate in one day.
I hope this post can provide some insight into what someone who is typically called a “healthy eater” really eats. Spoiler alert: organic pop tarts are included. Yes, I know organic does not mean healthy haha and that’s okay with me! Not all food should be consumed for nutrition; some should be ate because it is delicious and makes us happy! I do not follow any diet. I enjoy the intuitive eating approach, which has allowed me to honor my body, tune out diet culture and make peace with all foods.
Anyways, this was a day of pretty healthy eating for me. Sometimes (usually) I eat way more chocolate, if you know me you know this is true. Sometimes there are more granola bars or food that come in a wrapper than I’d care to admit but it depends on what I am craving that day, what groceries I have and how busy I am.
Please don’t compare the amount of food you need to eat to the amount that I eat. All of our bodies are different and unique. I will say I think I have a pretty good appetite though 🙂
Breakfast
I’m definitely a sweet breakfast girl. Smoothies, oatmeal, pancakes, yogurt — I always go for sweet over savory! Breakfast was a chocolate blueberry smoothie. I loaded it with chocolate protein, cacao powder, flax, frozen blueberries, almond butter and almond milk. I topped it with chocolate coconut granola (more than pictured). Yum!

Lunch
While I may prefer a sweet breakfast in the morning, I love breakfast any time of the day! For lunch, I went savory with a roasted sweet potato that I mashed with butter and two dippy eggs. This is one of my favorite combos of all time, plus it’s so easy!
For “dessert” I had half of a pumpkin toaster pastry. I don’t think I’ve had something like this since I ate brown sugar Pop Tarts in high school, but I saw it and had to try it. This is a fun fall treat that I eat mindfully and will enjoy in moderation!
I sipped on a Zevia ginger ale after lunch. These are made with stevia instead of sugar but they taste like the real deal!
Snack
About two hours after lunch I was hungry again. I had an afternoon snack of yogurt, almond butter and Purely Elizabeth granola. This delicious combo of protein, carbs and healthy fats keeps me full until dinner!
Dinner
I smacked on some chips while I made dinner. My mom requested this Chickpea Curry, and it was a hit! It was easy (tip: make it even easier but buying your cauliflower pre-riced) and flavorful. I went back for seconds and am glad I made a double batch for leftovers for lunch tomorrow. I will definitely make it again!
Dessert
Dessert always! Tonight I had some Candy Bar Eat Enlightened ice cream. I don’t always like lower calorie ice creams but this flavor is really good. I also LOVE real ice cream and eat it regularly. No shame in my ice cream game. I then had some ginger tea before bed.
